DISHES YOU CAN COOK IN A MICROWAVE IN MINUTES

Renovating your kitchen? Living without a cooker? Or do you just love your microwave ? Whatever the answer, we have plenty of delicious microwave recipes that will kick ready meals to the kerb.

 

        Back in 2014, we conducted a food survey for our 25th birthday and as part of it asked 10,000 people what piece of kitchen kit they can’t live without. The winning answer? The humble microwave. But beyond melting, defrosting and general time-saving, the resouceful microwave can be used to cook whole meals – and we’re not talking the pre-prepared variety. Read on for 10 clever ideas for creating speedy suppers and perfect puddings with the press of a couple of buttons and waiting for the magic ping.

 

 

Microwaveable Jambalaya

  Finding this recipe felt like a dream come true when it came to our kitchen renovation (or so far just dismantlement). It actually feels like you are making a proper meal, rather than just heating something up in the microwave. The end result is a really fresh, fragrant and super healthy supper that everyone should enjoy, and tastes pretty authentic too.

Ingredients

 400g can chopped tomato with garlic

1 canful of easy-cook rice

2 chorizo or other spicy sausages, about 200g/8oz, skinned and chunkily chopped.

2 handfuls of frozen sweetcorn  kernels or a 198g can, drained

a large sprinkling of Cajun seasoning

 

To serve

a small handful of parsley, chopped (optional)

142ml tub soured cream

 

Method

   1. Tip the tomatoes into a large microwavable bowl. Fill the empty can with rice and tip it into the bowl, then fill the can with water and pour it in. Stir in the pepper, chorizo, sweetcorn, Cajun seasoning and some salt and pepper to season.

 

2. Cover the bowl with cling film and pierce a couple of holes in it with a knife. Microwave the rice for 10 minutes at 750W. Tear off the cling film and give everything a really good stir, then return the uncovered bowl to the microwave for another 12-15 minutes until the rice is done.

 

3. Take the bowl out of the microwave, cover it with a plate and leave to stand for 5 minutes before stirring in the parsley, if you are using it. Serve the jambalaya straight from the bowl, with the soured cream to spoon over it.
